Caraway achenes of two varieties (Kepron, Prochan) obtained from three different localities in 2006 (maize growing region, sugar beet growing region, potato growing region) were stored for 5 and 7 months after the harvest. The samples were taken from 1 m2 of the experimental plots (6 m2), in three replications, cleaned and stored for the first month in paper bags at a temperature of 20 oC, and after that they were stored in a refrigerator at 4 oC. The number of moulds (number of Colony Forming Units = CFU) on the achenes surface of 1 g of dry sample after 5 and 7 months was evaluated. The data were tested by two way analysis of variance by means of STATISTICA CZ 8.0 software, and the differences between the average values were tested by Tukey HSD test(alpha = 0.05). After 5 months, the variety had no statistically significant effect on moulds content, while the influence of the locality was statistically highly significant.
