The aims of this thesis consisted of investigating the impact mouldy grain contaminated with deoxynivalenol (DON) on the health status of rats and their ability to resist oxidative stress. Rats were 28 days feeding of diet supplemented with DON and others (organic and inorganic zinc, the addition of vitamins and mycosorb). Among the factors determining the levels of defences include peptides and proteins (glutathione, metallothionein (MT)). The highest concentration of MT was found in the tissues providing detoxification of xenobiotics, such as kidney (6.69 +/- 0.05 microg/ml) and liver (6.06 +/- 0.05 microg/ml). Half concentration was detected in heart, brain, testes and muscle (app. 3.0 microg/ml). In conclusion, the MT may play an important role inthe detoxification of mycotoxins.
