Consumers are always curious about the quality of meat and their products they are consuming. There are lots of adulterants being added to the meat that not only compromise the quality but also create serious health issues. Antibiotics are generally used to treat various types of microbial infections in the livestock sector. In addition, some antibiotics also act as growth promoters for meat animals’ growth. Although many food safety agencies operating in different countries set the maximum residue limits for drugs found in the different body parts of meat animals, besides this, these agencies usually ban many veterinary drugs/antibiotics for use as growth promoters. Immunosensor technology has gained popularity as point-of-care testing, especially for detecting fraudulent activities in meat and their products. Our chapter well describes the immobilization technology for the designing of immunosensors as well as details about the developed immunosensors’ application in the detection of antibiotics in the meat and their products.
