This work is focused on preparation of nisin containing multicomponent microspheres comprising a core based on unmodified polyvinyl alcohol (PVA) crosslinked with glutaric acid (GA) at various degrees. The shell of the microspheres consists of biodegradable polylactic acid (PLA). Encapsulation of nisin in PLA/PVA microspheres was conducted by emulsification solvent evaporation technique. Morphology of the microspheres was studied by using electron microscopy. The efficiency of encapsulation and release kinetics of nisin were evaluated by HPLC. The results revealed that the presence of nisin in the microspheres has no significant effect on their morphology. On the contrary, it was found that the crosslinking degree of PVA increases the average size of the prepared microspheres and also broadens their size distribution. Encapsulation efficiency showed higher values for the non-crosslinked (> 90%) that for the crosslinked PVA systems (> 50%).
