Alternative methods for monitoring of the food authenticity

Project goals

The project is aimed to extend the spectrum of analytical methods for the detection of food adulteration. Immunochemical methods for the identification of food allergens as egg, peanuts, hazelnuts and almond proteins and paralelly molecular bilogical methods for the imported sea fishes species differentiation will be developed. The monitoring of various food commodities in the market of the Czech Republic will be realised. Developed methods will be validated and acredited.

Budou vypracovány imunochemické metody pro detekci potravních alergenů vejce, ořechy a mandle a současně budou vyvíjeny metody molekulárně biologické PCR a Real-Time PCR pro rozlišení druhů dovozových mořských ryb. Bude proveden monitoring potravin různých komodit v tržní síti ČR. Metody budou validovány a připadně i akreditovány.
