Original language description
The major part of wheat protein complex, which is very heterogeneous, is glutenin. Based on their molecular weight glutenin subunits can distinguish the so-called high molecular weight glutenin subunits (HMW-GS) and low molecular weight glutenin subunits(LMW-GS). Glutenins play an important role in creating of bread making quality. Study of their polymorphism has an important meaning lies in the possibility of grain quality prediction in the breeding material.
