    Whey as a by-product from the manufacture of hard, semi-hard or soft cheese and rennet casein is known as sweet whey and has a pH of 5.9 – 6.6. It is the milk serum that is obtained after the casein is removed from the milk. For many years, whey produced as a by-product of cheese production was considered a waste material and was either dumped, sprayed on fields as fertilizer or at best, dried as cheese whey powder destined for the animal feed applications. Over the last year, the studies proved the importance of wheys nutritional value. The composition of demineralized whey is suitable for infant feeding, sports nutrition or special nutrition for chronically ill persons. Membrane processes are effective separation methods to demineralization of whey. Higher amounts of lactic acid lowers the performance of electrodialysis.
