    New perspectives for growing and processing hulless barley grain for human consumption in the Czech Republic result also from maximum use effectiveness of its lower field production. Based on the knowledge of reducing effect of food dietary fibre and milk starter cultures on the content of bile acids, resulting in reduction of the level of blood serum cholesterol, new bactocereal food additives has been developed. The own newly developed hulless barley lines and introduced varieties of spring barley with a genetically determined higher dietary fibre content (particularly beta-glucans) and milk starters exhibiting optimum properties as regards resistance to bile acids, pH shock and ability to grow at low pH were used. The complex that comprises solublefibre isolated from barley bran and selected bacterial cultures was tested in standard food products.
