Lactic acid bacteria represent a heterogeneous group of bacteria with one main common feature - the production of lactic acid., some of which may be present as contaminants in beer brewing. The most risky genera are Lactobacillus and Pediococcus. The poster is focused on the techniques of detection of lactic acid bacteria in brewery laboratory. In first phase of study the growth was monitored in a set of 53 strains of Lactobacillus and Pediococcus on solidified culture media, e.g. MRS agar and its various modifications, the media Raka-Ray, NBB, UBA, etc. The study also included some liquid media. Selected strains were then used in a consequential set of experiements - incubation of beer-adapted and non-adapted bacteria in beer. In subsequent testing of cultivation media, MRS and its modification were evaluated as the most effective. Raka-Ray was evaluated as the least suitable for the detection of lactic acid bacteria. The real usefulness of the media in brewery plant laboratory was also evaluated. Poster at 2018 School of Fermentation Technology, Andrychow, Poland, 2018.
