Impact of the quotient of lean muscles in slaughter hogs on the slaughter value
Original language description
Verification of the achieved percentage of lean muscle on the sectional indicators of slaughter value in final hybrid pigs was the objective of this test. The test was carried out in the test station on 199 heads of the final hybrid pigs of common genotypes used in the CR, in which the main slaughter parts were evaluated with respect to SEUROP systém classification, overall size and their meat share. It may be concluded that the parts of the neck and the ham, the overall share of which and the meat share on these parts significantly increases with the overall meat share in the carcass, parcitipate most of all on the increasing meatliness of the present pig-genotypes. It was also confirmed that the percentage of the shoulder and meat ratio from that part of carcass does not change in relation in the increasing of meat percentage. An interesting trend has been proved in the slaughter part of chop, when its overall meat-share in the carcass decreased in relation to the increasing percenta
