Use of video-analysis in the determination of meatiness of the carcass belly in pigs
Original language description
The aim of the work was to verify the possibility of using video-analysis for an objective determination of meatiness of the carcass belly in pigs. The belly part is one of the biggest parts of the carcass. Therefore it is necessary to know the exact composition of this part in terms of the meat: fat ratio. The work included a detailed dissection of 60 carcass belly in order to identify supporting indicators with a high informative value relating to the share of lean meat in the belly. In practice, thefollowing indicators may be used for the calculation of the share of lean meat in the belly: lean meat area (AM2) and total area of the belly (AT2) in the section between 10th and 11th ribs in mm2 and the weight of the belly (WEU) in kg: y = 30,41037334+ 0,59364437*(AM2/AT2) ? 2,29878959*WEU (r2 = 0,784). Additional indicators may be used for further specification of the estimate: lean meat area (AM3), total area of the belly (AT3) in mm2 between 7th and 8th ribs and the lean meat area
