Antioxidants constitute a large group of secondary plant metabolites being ubiquitous among higher plants and they have been repeatedly implicated as potent constituents with the potential therapeutic value esp. of flavonoids in reduced risk for cardiovascular diseases and cancer. They represent a large group of naturally occurring compounds, which recently have attracted considerable attention as dietary constituents with potential importance for human health. Polyphenolic compounds, esp. flavonoids are effective antioxidants due to their capability to scavenge free radicals of fatty acids and oxygen. Antioxidants regarding their chemical structure could be divided in polyphenols (flavonoids, anthocyanins, phenolcarboxylic acids, and coumarins), carotenoids, and tocopherols. Also ascorbic acid and selenium have strong antioxidant activity.
