Antioxidants constitute a large group of secondary plant metabolites being ubiquitous among higher plants and they have been repeatedly implicated as potent constituents with the potential therapeutic value esp. of flavonoids in reduced risk for cardiovascular diseases and cancer. They represent a large group of naturally occurring compounds, which recently have attracted considerable attention as dietary constituents with potential importance for human health. Polyphenolic compounds, esp. flavonoids are effective antioxidants due to their capability to scavenge free radicals of fatty acids and oxygen. Major antioxidants related to their chemical structure could be classified into polyphenols (flavonoids, anthocyanins, phenolcarboxylic acids, coumarins), carotenoids, tocopherols, ascorbic acid and selenium. Major sources of these compounds are fruits, vegetables, potatoes, cereals, among beverages vegetable and fruit juices, tea, coffee, red wine and beer are important antioxidant sour
