Properties and crystallization of fat blends
Original language description
Model fat blends with different concentrations of structured fats were prepared and their physical and chemical properties were studied. Fat blends were made from structured fats based on fully hydrogenated fats (fully hydrogenated palmstearin and fullyhydrogenated low erucic rapeseed oil) after transesterification with fully hydrogenated coconut oil. Observed properties depended on concentration and composition of structured fats.

Czech description
Byly připraveny modelové tukové násady s různými koncentracemi strukturních tuků a byly sledovány jejich fyzikální a chemické vlastnosti. Tukové násady byly připraveny ze strukturních tuků na bázi plně ztužených tuků (plně ztužený palmstearin a plně ztužený bezerukový řepkový olej) po transesterifikaci s plně ztuženým kokosovým tukem. Pozorované vlastnosti závisely na koncentraci a složení strukturních tuků.
