    Antimicrobial effects of fatty acid fructose esters

    In the present work antimicrobial properties of several fatty acid fructose esters against Bacillus cereus DMF 2001, Escherichia coli DMF 7503, Saccharomyces cerevisie DMF 2880 and Fusarium culmorum DMF 0103 were studied. Caprynoylfructose showed the highest antimicrobial activity. The inhibitory effect decrease rapidly as the chain length increased.
