    Galactooligosaccharides are produced from lactose by a glycosyl transfer of one or more D galactosyl units onto the D-galactose moiety of lactose catalysed by ?-galactosidase. Many factors have influence on this reaction e.g. temperature, concentration of substrate and origin of enzyme. Enzymes from different sources produce different types of galactooligosaccharides. We used three different type of enzyme in this work. The one of them was from commercial source and the other two were isolated from bacteria in form of crude cell extract. Lactobacillus delbruckii ssp. bulgaricus and Streptococcus thermophilus were used as bacteria sources and Maxilact LX 5000 was used as commercial source. Lactose in buffer, ultrafiltration permeate and recombined wheywere used as substrates. The concentration of enzymes was 0.5 U.mL-1 and concentration of used substrates was 50 g.L-1.
