The role of higher chitooligomers in medical applications is increasing due to their interesting biological activities. Transglycosylation activity of .beta.-N-acetylhexosaminidase from Aspergillus oryzae was employed to produce higher chitooligosaccharides from a mixture of lower chitooligomers prepared by acid hydrolysis of chitin.
