Original language description
Plant secondary metabolites represent a group of natural bound compounds providing a great potential for utilization in various antropogenic sinks. Plant polyphenols were described as aromatic hydroxylated compounds, naturally contained in the tissues ofplants. These plant secondary products show up strong antioxidant activity in the area of ROS attack. Thus, polyphenolic derivates presents a significant portion of our diet. Based on the investigations of phenolic biochemical properties including radical scavenge kinetics, rated to antioxidant content, the methods for antioxidant activity determination had been developed. The assessment of health beneficial effects applied to functional content is complicated from many points of view, mostly in the reason of structural variability of antioxidant content or common technical difficulties caused by substrate-matrices interactions. In present, the research of human nutrition is focused on possibilities to quantify health beneficial effect
