Original language description
The selected antioxidants were determined in the biomass of spring barley (Malz, AF Lucius, Sebastian,) in two growing phases (DC29, DC31) from two localities (Zabcice, Kromeriz - CZ). Juice was made from the biomass of the variety Sebastian (DC31, Zabcice) in 2006. The highest activity of superoxide dismutase (SOD) was determined in the variety Sebastian (471 U/g d.m.). The varieties did not differ in vitamin E activity statistically significantly, but the highest activity was determined in the varietySebastian (76.82 mg/kg). The mean vitamin E and SOD activity were the highest in the growing phase DC29 (83.94 mg/kg d.m. and 462 U/g d.m.) versus growing phase DC31 (65.84 mg/kg d.m. and 381 U/g d.m.). Barley green biomass has higher content antioxidants than barley grain. Lyophilisation for preserving vitamin E activity and content of its isomers appeared to be the most appropriate, treatment with high pressure and freezing was the least suitable.
