    Response of cherries to low oxygen atmosphere

    Effects were examined of different controlled atmosphere on sweet cherries and sour cherriesfruit of 'Vanda' and 'Kordia' (Prunus avium L.) cultivars during storage. Fruits were kept for 30 days at 3.0 - 3.3°C under ultra-low oxygen storage (ULO = 0.9% O2 and 1.0% CO2), controlled atmosphere (CA = 2.0% O2 and 9.0% CO2), anaerobiosis (AN = 0.2% O2 and 1.0% CO2), regular atmosphere (RA = 21% O2 and 0.03% CO2). Relationships between the composition of O2 and CO2 content during this period and after the removal from gas mixture to ethanol, acetaldehyde, sensorial value and some textural values of fruit were investigated. Subsequent exposition of the fruit to air but still under cold-storage temperature resulted in linear or exponential decrease of ethanolto half or even one third of its previous value. The concentration of oxygen at a level of 0.9% (ultra low oxygen -- ULO) does not harm physiologically the tissues of sweet cherries by producing mostly the non-substantial content of ethan

    Byl zkoušený vliv plynných směsí na skladovatelnost třešní a višní. Vztah mezi obsahem CO2 a O2 byl zjišťovaný na produkci acetaldehydu, ethanolu a texturní změny během uložení v plynných směsích a v následném skladování. Koncentrace kyslíku na hladině 0.9 % (ultra low oxygen -- ULO) neměla škodlivý vliv na produkci ethanolu v pletivu. Rovněž se v této koncentraci neprojevil off-flavor, který by byl z anaerobního dýchání.
