Formation of anaerobic products in sweet cherries and their partial release into ambient atmosphere under low oxygen storage
Original language description
The responses of two different cultivars of sweet cherries, 'Vanda' and 'Kordia', to a range of different storage atmospheres at 2.5- 3°C were monitored for 28 days. These were CA ( controlled atmosphere - 7 % CO2 with 2 % O2) , ULO ( ultra low oxygen) and RA (regular atmosphere). At harvest, the concentrations of acetaldehyde in the flesh of the fruit were 4.6 plus minus 0.3 mg.l-1 and 4.2 plus minus 0.35 mg.l-1 for 'Vanda' and 'Kordia', respectively, but this difference is not regarded as significant.Acetaldehyde levels showed little response to the different gas mixtures and is not a useful measure of physiological changes.
