In this study was determined content of hydroxymethylfurfural and invertase and diastase activities in honeys produced in the Czech Republic. These indicators of age and thermal treatment of honey were determined in fresh honeys and than once more after8 months. The honeys were stored during these 8 months by three methods: at laboratory temperature on the light, at laboratory temperature in the dark and in the refrigerator. It was found that content of hydroxymethylfurfural increased statistically significant in honeys stored at laboratory temperature on the light and in the dark. Invertase activity decreased statistically significant in honeys stored at laboratory temperature on the light and in the dark, but invertase activity increased statistically significant in samples stored in the refrigerator. Diastase activity decreased statistically significant in honeys stored at laboratory temperature on the light and in the dark.

Indikátory stáří a tepelného ošetření medu v průběhu skladování

Czech description

V této studii byl stanoven obsah hydroxymethylfurfuralu a aktivita invertázy a diastázy v medu pocházejícím z České republiky. Tyto indikátory stáří a tepelného ošetření medu byly stanoveny v čerstvém medu a potom znovu po osmi měsících. Medy byly v průběhu těchto osmi měsíců skladovány třemi různými způsoby: při laboratorní teplotě na světle, při laboratorní teplotě ve tmě a v chladničce.Bylo zjištěno, že se obsah hydroxymethylfurfuralu statisticky významně zvýšil v medech skladovaných při laboratorníteplotě na světle a ve tmě. Aktivita invertázy statisticky významně poklesla v medech skladovaných při laboratorní teplotě na světle a ve tmě, zatímco v medech skladovaných v chladničce statisticky významně vzrostla. Aktivita diastázy statisticky významně poklesla v medech skladovaných při laboratorní teplotě na světle a ve tmě.
