Cheese is the most frequently food connected with biogenic amine production. The levels of biogenic amines in cheeses of Czech market were investigated. Tyramine, putrescine and cadaverine were the prevalent amines, followed by histamine.

Czech description
Cílem práce bylo vyhodnotit zastoupení a koncentrace BA v sýrech dostupných a konzumovaných na Českém trhu. Ve sledovaném souboru vzorků sýrů byly nejvíce zastoupeny tyramin a kadaverin, dále putrescin a histamin.
