The aim of the study was to compare the amino acid composition of fillets of 4 experimental groups of carp, i.e. pure line of Hungarian mirror carp, the hybrid of Hungarian mirror carp and Hungarian mirror line, the hybrid of Hungarian mirror carp and Israeli breed, the hybrid of Hungarian mirror carp and Northern mirror carp with the quality of fillets of control hybrid of Ropsha and Tataj carp.
