The aim of our study was to define the profile of fatty acids (FA) in muscles of fattened pheasant chicks and its comparison between the breast and thigh muscles. In the age of 90 days we randomly selected 10 individuals of pheasants for subsequent analysis of fatty acids. The concentration of fatty acids was determined by gas chromatograph GC 2010 - Shimadzu.The proportions of FA were determined in g/100g FA. Our results suggest that fat of pheasants in the thigh muscle contained generally a higher content of monounsaturated fatty acids (MUFA) as compared to the breast muscle.
