    The susceptibility of Salmonella spp. to 15 fatty acids was determined in vitro in cultures grown on glucose. Antimicrobial activity was expressed as IC50 (a concentration at which only 50% of the initial glucose in cultures was utilized). Caprylic acidwas the only acid inhibiting glucose utilization

    Účinek mastných kyselin C2 - C18 na salmonely v podmínkách in vitro

  • Czech description

    Zjišťovali jsme účinek 15ti mastných kyselin na růst salmonel v kulturách s glukosou. Jedinou kyselinou inhibující růst byla kyseliny kaprylová. V kulturách S.enteritidis, S. infantis S. typhimurium byla koncentrace kyseliny kaprylové snižující utilizaciglukosy na 1/2 v rozmezí 0,75 - 1,17 g/l. Při pH 5,2 - 5,3 klesl účinkem kyseliny kaprylové počet živých buněk pod mez detekce, při pH 6,3 - 6,6 několik % buněk přežilo
