    The antimicrobial activity of fatty acids, monolaurin, citric, succinic, fumaric, malic and lactic acid was determined in vitro against Escherichia coli, Salmonella spp. and Clostridium perfringens. Caprylic acid was the only acid inhibiting glucose utilization in all strains. In strains of Cl. perfringens, however, lauric and myristic acid were more efficient than caprylic acid. Growth of clostridia, but not other bacteria was inhibited also by monolaurin and citric acid. In Cl. perfringens, transmission electron microscopy revealed damage of cytoplasmatic structures and separation of inner and outer cell membranes.

    Zjistili jsme citlivost Escherichia coli, Salmonella spp. a Clostridium perfringens v podmínkách in vitro k mastným kyselinám, monolaurinu, kyselině citronové, jantarové, fumarové, jablečné a mléčné. Kyselina kaprylová byla jedinou kyselinou, která inhibovala utilizaci glukosy u všech zkoušených bakterií. V případě kmenů Cl. perfringens však byla méně účinná než kyselina laurová a myristová. Růst klostridií, ne však ostatních bakterií, byl inhibován také monolaurinem a kyselinou citronovou. U těchto bakterií transmisní elektronová mikroskopie ukázala poškození cytoplasmatických struktur a oddělení vnitřní a vnější buněčné membrány.
