The aim of the Doctoral thesis was to evaluate the antimicrobial activity of nineteen organic acids and two monoacylglycerols against Campylobacter jejuni. The objective was to determine inhibitory concentrations of organic acids in vitro and to confirmthese results also by in vivo experiment. Two different methods were used to assess the antimicrobial activity of acids: the measurement of cell protein concentration in treated cultures by the biuret method and a SYBR Green based real-time PCR assay. Caprylic, capric and lauric acids were the most efficient antimicrobials among the compounds tested (IC50 <= 0.10 mg/ml). Antimicrobial acitivity of organic acids was pH-dependent, being more pronounced at a lower pH than at a pH higher than 6. The effectof the time of incubation was less evident.
