    One of the trends of current food industry is the search for new raw materials. One of them can be Cornelian cherry (Cornus mas L.) which is an original woody plant in the conditions of Central Europe. The aim of the research was to compare the fruit of6 cultivars of this fruit species. The parameters important for fermentation processes were determined ? the soluble solid content (SSC), crude protein content and phosphorus content. The promising cultivar seems to be the 'Vydubeckij' cultivar the fruits of which contained 17.42% of dry matter (DM) and SSC was 15.81% Brix. For fermentation the contents of crude protein and phosphorus are important and the highest values were observed in the fruits of the 'Titus' cultivar - 10.92 g of crude protein.kg-1of fresh mass (FM) and 435.14 mg of phosphorus.kg-1 FM.
