In the book chapter, recent knowledge on the response of annual field crops to low temperatures (chilling, frost) is summarized. Two basic modes of annual plant response to low temperatures - cold acclimation and vernalization - are discussed. In the first part, general physiological mechanisms of plant cold acclimation regarding perception of cold signal, its transduction, changes in gene expression and subsequent changes at transcriptome, proteome and metabolome levels are analyzed. In the second part, environmental as well as plant developmental factors determining winter survival and hardiness of winter annual crops (winter types of cereals from the tribe Triticeae and winter oilseed rape) are discussed. In the third part, mechanisms underlying vernalization processes are analyzed and recent knowledge on vernalization processes gained on model plant Arabidopsis thaliana as well as on winter-type cereals from the tribe Triticeae are compared.
