The research results of the high - pressure application for processing of different food products and semiproducts are promising. The Czech producer of forming machines and isostatic presses is developing the special equipment convenient for food processing. The size of the equipment, attainable pressure and competitive price open the high - pressure technology accessible for the local food processores. The high value,minimum processed fruit and vegetable products, functional foods and other fresh likeproducts can hit customer demands. The purposes of high - pressure technology application are discussed. One main purpose can be found to complete the traditional processing and packaging to prolong the shelf life. The new technology of herb plant processing was also tested to avoid the drying of extraction step and keep the fresh herb plant accesible for the whole season.
