RATIONALE: Cow´s milk allergy is one of the most widespread human allergies in early childhood. Common processing of the milk proteins may increase its biological safety but can result in changed immunoreactivity promoting IgE response in allergic children. METHODS: To compare IgE reactivity to native and processed cow milk protein, we analyzed sera from milk-allergic children by IgE-immunoblotting. RESULTS: Identical IgE-binding structures were found in native as well as in processed cow milk products.Sera of some patients showed new IgE reactivity in processed milk. CONCLUSIONS: Common cow milk processing can result in increased IgE-immunoreactivity.
