Biodegradable waste (BDW) represents a significant group of wastes that can, if deposited in landfills, endanger the environment by generating greenhouse gases and by harmful leaks. One of the BDW categories dealt with in this paper is a "kitchen waste".The term "kitchen waste" is used for all types of food waste produced by restaurants, catering establishments and kitchens, including cookshops and home kitchens. Kitchen waste is classified in the Waste Catalogue as an organic compostable kitchen waste, and therefore it should be treated in accordance with the Act on wastes. Since the kitchen waste is composed mainly of BDW, it should be further processed. Discharging in the sewerage with the use of garbage grinders is often forbidden by providers ofsewerage systems, because high organic pollution of waste water can cause serious problems during its treatment and consequently also problems in complying with the limits set for waste water and its discharge in rivers.
