Composition, physical and technological properties of raw milk as affected by cattle breed, season and type of diet.
Popis výsledku v původním jazyce
The aim of the study was to describe the differences in composition, physical and technological properties of raw milk as affected by breed of cattle, season and type of feeding. The study was conducted on bulk milk samples (BMS, 64). Czech Fleckvieh (CF, 4 herds) and Holstein (H, 4 herds). Half of herds of each breed was grazed (G) during summer season while the other half was not (N), winter (W), summer (S). Milk fat in CF was higher than in H breed being 3.9 and 3.72 g/100 g, respectively (P<0.05). CF cows had higher content of crude protein (CP), casein, true protein (TP) and non-protein nitrogen (NPN) than H (P<0.05). Content of fat, CP, casein, TP and whey protein (WP) was lower in summer (S) than in winter (W) (P<0.05) while content of NPN showed an opposite trend (P<0.05). Content of lactose, urea, acetone, somatic cell count (SCC) was not affected by the season (P>0.05). Electric conductivity (EC) and pH being 4.10 mS/cm and 6.70 in S were higher than in W being 3.91 mS/cm and
