This book provides a deep analysis of food supply chains and food consumption.Contemporary food supply chains suffer from a high concentration level and unfair trade practices damaging the Agri producers. The concentration of food producers and retailers leads to higher market power. Thus, farmers often receive a low price for their products than they would receive in the competitive market. As a result, they may also carry additional costs. The imbalance in bargaining power may cause unfair trade practices, further reduce the market efficiency and negatively affect the consumers by reducing their welfare and lowering the diversity, safety, and quality of available goods. Specific types of unfair trade practices are subject to European legal regulation and the member states implemented it into their national legislation. Food consumption is analyzed from the point of view of food security. Severalpillars of food security are described: availability of food, access to food, utilization of food, stability, and nutrition. Inhabitants of less developed countries suffer from higher food insecurity than inhabitants of countries with a higher standard of living.The central and eastern Europe countries have lower food availability than the old EU countries (EU-15). Also, access to food is insufficient in east and central Europe. On the other hand, more people in CEE countries suffer from being overweight or obese. Moreover, anemia and other illnesses from low-quality diets are more frequent.
