The aim of this study was to investigate the influence of growing conditions on the quality of potatoes from organic farming systems as compared to that from conventional farming. In two separate localities in Czech Republic comparison between five potato varieties grown in organic and conventional production systems was made. To determine possible inter-annual variations experiments were performed on three consecutive crops (2002 - 2004). The parameters analyzed included potato glycoalkaloids, free amino acids as well as chlorogenic acid. The results indicated higher chlorogenic acid content to be the parameter most consistently differentiating organically from conventionally produced potatoes. Elevated (but not significant) concentrations of glycoalkaloids were observed in some potato varieties grown in organic farming systems.
