Acid whey was processed under a different conditions. It was also designed and drawn formulation of a new type of product - dairy desert containing demineralized acid whey concentrate. Considering all experiments it is possible to say, that desalinationof whey, both acid and concentrated, it is better to use a standard electrodialysis cation- and anion-exchange stack. For lactic acid isolation should be used standard electrodialysis stack with anion exchange, cation-exchange and bipolar membranes. In case with desalination of whey by bipolar membrane module was found that the elevated process temperature has only small effect on the course of electrodialysis. Prolonged experiment shows higher efficiency (33 %), but 4,5x prolonged duration leads to thefact, that such processing is not profitable to carry out in practice.
