The chapter provides an overview of the functional principles used to composition measurement of liquids and gaseous mixtures. The introductory part of the chapter deals generally analyzers composition of gases and liquids and describes the characteristics properties of the automatic analyzers. In the section entitled "Measurement the composition of the liquids" are described density sensors, optical sensors, IR analyzers for liquids, viscosity sensors, sensors of electrolytic conductivity of liquids and electrochemical sensors. In the section entitled "Measurement the composition of the gas mixtures" are described thermal conductivity analyzers, analyzers with catalytic sensors, semiconductor sensors, photometric analyzers, magnetic analyzers, analyzers with photoionization detectors, electrochemical gas sensors and process gas chromatographs. Special part discusses sampling and sample preparation for automatic analysis. Another part deals with the measurement of solid particles in gases. The final part of the chapter is devoted to color measurement of foods and other products.
