The term “surface tension” reflects the nature of intermolecular forces in the neighboring liquid and vapor phases. Surface tension decreases with increasing temperature and at critical temperature drops to zero value. To a small extent it is influenced by pressure and in the case of small dimensions also by the interface curvature. While pure liquids have a single surface tension value called “static” or “equilibrium” surface tension, the surface tension of solutions (especially surfactant solutions), called “dynamic surface tension,” changes with time. Due to the effect of the surface tension on the conditions of mechanical equilibrium in the systems with great curvature (small drops, bubbles, liquids in capillaries) the phase equilibrium is also influenced. Wetting and spreading are other phenomena governed by surface and interfacial tensions. They are very important not only for industrial processes, but also in physiology, medicine, or nature. Since surface tension manifests itself in various effects, many methods are available to its determination (capillary elevation, drop and bubbles shape analysis, spinning drop, maximum bubble pressure, detachment methods, drop weight and drop volume methods, oscillating jet, oscillating drop or bubble, capillary waves).
