The cholesterol content in eggs during the hens laying period

The aim of this study was the determination of actual cholesterol content in dependence on the lay period in the eggs of breeding hybrid Hisex Brown from the large capacity poultry farm. The eggs were collected within the whole lay period in 10 week i ntervals. Average content of egg cholesterol varied from 153.45 # 12.39 to 263.90 # 14.83 mg in the dependence on the lay period. The lowest values were found in eggs at the beginning (till the 30th week) of the lay period (P < 0.01). Cholesterol contentineggs was increasing till the 30th week of the lay when it reached the peak and after the mild decrease at the 40th week (P < 0.05) it did not change till the end of the lay. After re-counting the cholesterol content per 100 g of egg yolk the mean va luevaried from 1185.76 # 110.12 mg to 1549.80 # 107.87 mg. Its highest concentration (P < 0.01) was found at the beginning of the lay period. At the 10th and the 20th week the cholesterol content decreased and has increased in the 30th week
