Determination of heavy metals and nutrition values in broccoli
Popis výsledku v původním jazyce
The aim of this study was to determine the content of chosen heavy metals (mercury, lead and cadmium) and some nutritional values (?-carotene and vitamin C) in raw broccoli samples obtained from trade network. For the assessment of heavy metals the samples were mineralized with the mixture of sulphuric acid and hydrogen peroxide and the analysis was performed using atomic absorption spectroscopy (analyzers AMA 254 and AVANTA GBC 933A, GBC, Australia). ?-carotene and vitamin C was extracted by hexane andacetone and mixture of methanol, phosphoric acid and redistilled water, respectively. Both ?-carotene and vitamin C were determined by high-performance liquid chromatography with electrochemical detection (Coulochem III, ESA, USA). The broccoli samplescontained 0.094 ? 0.1152 ?g.100g-1 of mercury and 0.0004 ? 0.03981 ?g.100g-1 of lead. No cadmium was detected. It appears from this results that no heavy metals accumulate in this vegetable since all concentrations were below quality stan
