The changes of selected nutritional parameters during the germination of diploid and tetraploid buckwheat seeds
Popis výsledku v původním jazyce
The dry and 4, 6 and 8 days germinated buckwheat seeds of diploid variety "PYRA" and tetraploid variety "EMKA" were analysed for the basic chemical composition, rutin, vitamins and amino acid composition. The basic chemical parameters of dry seeds of theboth buckwheat varieties were similar. The similarity has been found in the content of majority of essential amino acids and also in content of vitamin B2 where the differences were small (more than 15 %). he significant differences (less than 31% ) between the varieties were determined in content of rutin and two amino acids - menthionin and leucin. "Emka" had higher content of leucin (by 41 %) and methionin (by 36,5 %) than "Pyra" had more than two times higher content of rutin (by 138,5 %) than "Emka". Tetraploid variety "Emka" had relatively higher content of vitamins B1 (20,8 %) and B6 (19,3 %) and also of lysine (23,9 %) than "Pyra. There were determined only small changes in the basic chemical composition during the germinationd
