Baroindication data were obtained on the experimental suspension of Staphylococcus epidermidis CCM 4418 in model solutions within the pH range of 6.4 to 7.2 and water activity equalling 0.99. The baroinactivation data plotted against pressure holding times show an exponential course of inactivation and can be described by a simple baroinactivation model. Parameters of this model Z, Dp,ref were set as a function of pH for the reference pressure of 300 MPa. The model is valid within the pressure range of200 to 350 MPa and for 0 to 16-minute holding times. The model created was verified for pasteurized breast milk and for UHT treated defatted cow's milk. In breast milk the agreement between the experimental data and the prediction by the model was very good. In UHT treated defatted cow's milk the agreement of experimental data with the model was much worse. Baroinactivation of this substrate proceeded with more difficulty.
