The aim of the study was to demonstrate to celiac patients their real gliadin daily intake and to offer them very useful information concerning their diet: both possible mistakes in their own diet choices and those of manufacturer?s claims. We monitoredtheir adherence to a gluten-free diet, within the context of their routine everyday diet regimens and quantified their daily intake of gliadin on the basis of gliadin determination. A gluten-free diet was followed for 30 days by 14 patients. The patientstook regular daily meals, beverages, and sometimes medicine or food supplements. Gliadin content was determined by the sandwich ELISA method. Daily gliadin intake was calculated on the basis of the reported amount of daily menu ingested. Changes in thelevel of serum antibodies against transglutaminase and gliadin were monitored during the study as well. 1900 food samples were analyzed within the framework of this study.
