Hulled wheat species belong to neglected crops. However, they have the potential to be used by the food industry in the future. Based on current knowledge - einkorn is the oldest of domesticated wheat species. Nevertheless, it has been replaced by more productive tetraploid (emmer wheat, durum wheat) and hexaploid wheat species (bread wheat, spelt wheat). Emmer wheat used to be one of the most significant crops for almost 7,000 years. Generally said, the hulled wheat species can produce lower but more stable yield, providing a high-quality production. As the organic farming has developed, the hulled wheat species have become more attractive and have been used more in Europe. A strong resistance to some fungal diseases is their important quality. Although these used to be very important wheat species in the past, they are rarely grown nowadays. This chapter provides growing characteristics and quality parameters of the hulled wheat species. The hulled wheat grains contain more proteins than the bread wheat grains. Einkorn is not suitable for yeasty products. Neither does emmer wheat. Spelt wheat has better baking qualities than einkorn and emmer wheat. It can be processed easily. There is a wide range of spelt wheat processing possibilities and options.
