    Barley belongs to the group of the oldest and economically most important crops. Currently, most of barley production is used as feed. However, the best quality barley is used for production of malt, beer and whisky. Mycotoxin contamination of barley is a serious concern for the food and feed industry. One of the most common contaminants are trichothecenes. They are a compounds type of tetracyclic sesquiterpenoids and in term of their functional groups, divided into four groups (A, B, C and D). Type A and B trichothecenes are widely distributed in cereals as natural pollutants. The main producers of these toxic secondary metabolites are Fusarium spp. such as F. graminearum, F. culmorum, F. sporotrichioides, F. poae, and F. langsethiae. Mycotoxin derivatives that are undetectable by conventional analytical techniques because their structure has been changed in the plant are reffered to as “masked” mycotoxins. One of the most widely investigated masked forms of trichothecenes are the glucoside conjugates. The conjugated “masked” mycotoxin can be detected and quantified by appropriate analytical methods only when their structure is known and analytical standards are available. The liquid chromatography-tandem mass spectrometry (LC-MS/MS) offers a powerful tool for identification and characterization of mycotoxins and their modified forms. Ingestion of food derived from moldy grain that is contaminated with T2 and HT2 can cause toxic effects in humans and animals. Various countries from all over the world have set maximum levels (MLs) for T-2 toxin in feed products, ranging from 25 to 1000 μg/kg. Thus, specific EU harmonised MLs for T-2 and HT-2 toxins in food and feed products have not been established yet.
