This book chapter provides an overview of the preslaughter handling of various animals that are not conventionally considered as traditional species for meat production is described. The practical handling of species discussed include those derived from both wild harvesting, using hunting and culling, or farming, with onfarm or off-farm slaughtering. Particular emphasis is placed on the correct selection, handling, and processing of these animals within their unique production circumstances, to ensure that high welfare standards, meat hygiene, and food safety requirements are maintained. More specifically, this chapter focuses on non-traditional species of which their meat enters the commercial market through official and legislated channels, including cervids, antelope, ostriches, kangaroos, and crocodiles.
