The main objective of this paper is to monitor and describe changes in &#945;-galactosides during germination and calculation of alfa-galactosides degradation according to various model relationships. During germination, molecules of galactose are gradually broken away from alfa-galactosides by alfa-D-galactosidase, activated in the process of germination. The experimental data from germination of three types of grain legume seeds - mung bean, chickpea and lentil - were evaluated by means of nine equations. Correlation coefficients were in interval 0.96 - 0.99.
