Real time or near real time methods for detecting microorganisms are essentials for implementation of a Hazard Analysis Critical Control Point (HACCP) program in any food and beverage plant. Also very important especially for beer is control outside of breweries (draught beer dispensing systems) at restaurants and bars. In this study ATP bioluminescence method, based on the firefly luciferase system, as a quality and rapid control technique for assessment of cleanliness in beer processing plants and dispensing systems are used. The ATP is measured by a portable luminometer Uni - Lite NG and Hygiene International Pi - 102. Using test strains of Lactobacillus and Pediococcus species, trends were consistent for ATP method and colony forming units (cfu). Several orders of magnitude of growth or death were easily detected when strains were inoculated into a finished product at the start of the analysis.
