The work deals with the evaluation of moisture sorption characteristics at constant temperature for crystalline sugar and aqueous sugar solutions, e.g. with the relations between water content of sugar and water activity of air at given temperature. Thedata obtained from literature are used both for finding new empirical dependencies both for using existing sorption isotherm types like BET, GAB, Caurie, Henderson, Iglesias & Chirife, Oswin, Smith, Kuhn, Freundlich, Langmuir, Chung & Pfost, Chen and Bradley. It is possible to linearize most of the relations in a certain range and evaluate the fit suitability using the coefficient of determination.
